4 portions
  • 1/4 cups chipotle chili, for the sauce
  • 1 cup milk light, for the sauce
  • 1/2 cups low fat sour cream, for the sauce
  • 1 tablespoon fresh coriander, for the sauce
  • 2 tablespoons olive oil, one for the sauce
  • 1/4 cups onion, finely chopped
  • 1/2 cups Turkey ham, cut into cubes
  • 1/4 cups tomtato, cut into cubes
  • 1/4 cups corn kernels
  • 1/4 cups green bell pepper, cut into cubes
  • 2 cups curd, for the filling
  • 1 1/2 cups San Juan® Egg White, for the omelette
  • 2 tablespoons low fat sour cream, for the omelette
  • 1 tablespoon onion stem chambray, finely chopped, for the omelette
  • enough cooking spray oil
  • 1 cup spinach
  • to taste salt and pepper
  • to taste fresh oregano, to decorate

For the sauce, liquefy chipotle chili with milk, sour cream and cilantro.
Heat a tablespoon of olive oil in a pot over medium heat, pour the chipotle sauce and cook for 10 minutes or until thick. Season with salt and pepper.
For the filling, heat a spoonful of olive oil in a pan over medium heat and cook the onion, ham, tomato, corn kernels and pepper. Add the cottage cheese and season with salt and pepper. Reservation.
For the omelette, in a bowl beat the egg whites of San Juan® with the cream, the onion rings, season with salt and pepper.
In a frying pan over medium heat, sprinkle with a little spray and pour a little whisk mixture forming an omelette. Cook for 5 minutes or until well cooked.
Fill the omelette with some spinach leaves and stuffed with cottage cheese. Roll and place on the plate, bathe with the chipotle sauce and decorate with fresh oregano.


On an extended plate, accompanied by creamy chipotle sauce.


Use a Teflon pan to make the omelette, this way it will not stick when preparing it.
