Ingredients

4 servings
  • 1/4 of Cup of chipotle chile pepper for the sauce
  • 1 Cup of milk light for the sauce
  • 1/2 Cup of low fat sour cream for the sauce
  • 1 tablespoon of coriander for the sauce
  • 2 spoonfuls of olive oil one for the sauce
  • 1/4 of Cup of onion finely chopped
  • 1/2 Cup of Turkey ham cut into cubes
  • 1/4 of Cup of tomato cut into cubes
  • 1/4 of Cup of corn kernels
  • 1/4 of Cup of green bell pepper cut into cubes
  • 2 cups of curd for the filling
  • 1 1/2 cups of San Juan® egg whites for the omelette
  • 2 spoonfuls of low fat sour cream for the omelette
  • 1 tablespoon of onion stem chambray finely chopped, for the omelette
  • enough of cooking spray oil
  • 1 Cup of spinach
  • to taste of salt and pepper
  • to taste of fresh oregano to decorate

    Preparation

    For the sauce, liquefy chipotle chili with milk, sour cream and cilantro.
    Heat a tablespoon of olive oil in a pot over medium heat, pour the chipotle sauce and cook for 10 minutes or until thick. Season with salt and pepper.
    For the filling, heat a spoonful of olive oil in a pan over medium heat and cook the onion, ham, tomato, corn kernels and pepper. Add the cottage cheese and season with salt and pepper. Reservation.
    For the omelette, in a bowl beat the egg whites of San Juan® with the cream, the onion rings, season with salt and pepper.
    In a frying pan over medium heat, sprinkle with a little spray and pour a little whisk mixture forming an omelette. Cook for 5 minutes or until well cooked.
    Fill the omelette with some spinach leaves and stuffed with cottage cheese. Roll and place on the plate, bathe with the chipotle sauce and decorate with fresh oregano.

    PRESENTATION

    On an extended plate, accompanied by creamy chipotle sauce.

    TIPS

    Use a Teflon pan to make the omelette, this way it will not stick when preparing it.
