Eggs drowned in green sauce

  • 1 clove garlic, roasted, for the sauce
  • 1/4 onions, roasted, for the sauce
  • 1 green bell pepper, seedless and stemmed, roasted, for the sauce
  • 1 Jalapeño chile, seedless, roasted, for the sauce
  • 1/4 cups cilantro, for the sauce
  • 1/4 cups spinach, for the sauce
  • 3 tomatillos, roasted, for the sauce
  • 1/2 cups vegetable broth, for the sauce
  • salt, for the sauce
  • cumin, for the sauce
  • Capullo® 100% pure canola oil
  • 1/3 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 green bell pepper, in small cubes
  • 5 eggs
  • 1/4 cups requesón
  • 1 avocado, sliced
  • 1 Jalapeño chile, in slices
  • baguette, for serving

  • Blend the garlic clove, onion, bell pepper, jalapeño pepper, cilantro, spinach, tomatoes, vegetable broth, salt, and cumin until you achieve a sauce consistency. Set aside.
  • Heat the Capullo® 100% pure canola oil in a cast iron skillet. Sauté the onion, garlic, and bell pepper for 3 minutes. Pour in the sauce and cook for 2 more minutes. Add the eggs one by one, add a few tablespoons of cottage cheese, and bake for 15 minutes or until the eggs are cooked to your desired doneness.
  • Serve, garnish with avocado and slices of chili, and accompany with slices of bread.
