Eggs in the Casserole with Chorizo

  • 2 tablespoons olive oil
  • 1 cup chorizo, in slices
  • 1/4 cups green bell pepper, in small cubes
  • 1 1/2 cups Del Fuerte® Spiced Tomatoes, presentation of 345 g

  • 1/4 cups Cotija cheese, crumbled
  • parsley, finely chopped, for garnish

  • Heat the olive oil in a cast iron casserole over medium heat and cook the chorizo for 8 minutes or until golden.
  • Add the green bell pepper and cook for 2 minutes. Then, cover the ingredients with Tomates Molidos Del Fuerte® Condimentados, cook for 5 more minutes, and season with salt and pepper.
  • Add the three eggs to the casserole, on top of the sauce, very carefully and without breaking them. Cover and cook the eggs in the casserole for 5 minutes. Sprinkle with Cotija cheese and parsley.
  • Serve the eggs in the casserole with chorizo in the same skillet and accompany with sliced bread.
