1 1/2 cups Del Fuerte® Spiced Tomatoes, presentation of 345 g

Heat the olive oil in a cast iron casserole over medium heat and cook the chorizo for 8 minutes or until golden.
Add the green bell pepper and cook for 2 minutes. Then, cover the ingredients with Tomates Molidos Del Fuerte® Condimentados, cook for 5 more minutes, and season with salt and pepper.
Add the three eggs to the casserole, on top of the sauce, very carefully and without breaking them. Cover and cook the eggs in the casserole for 5 minutes. Sprinkle with Cotija cheese and parsley.
Serve the eggs in the casserole with chorizo in the same skillet and accompany with sliced bread.
