Eggs with feta cheese

  • 1 tablespoon butter, in cubes
  • 1 cup feta cheese, grated
  • 2 San Juan® eggs
  • salt
  • pepper
  • chile flakes
  • 2 pita breads
  • 1 avocado, ground
  • red salsa, for accompaniment
  • refried beans, for accompaniment

  • Melt the butter in a skillet over low heat. Sprinkle the feta cheese in a circle, and once melted, add the Huevo San Juan® to fry. Season with salt and pepper and add a bit of chili flakes.
  • Cover the egg and let it cook for 3 minutes or until done.
  • Spread enough avocado on the pita bread and place the egg with feta cheese on top.
  • Serve on a plate, drizzle with red sauce, and accompany with beans.
