Eggs with Rajas in Red Sauce

  • 4 tomatoes, grilled
  • 1/4 onions, grilled
  • 1 clove garlic, grilled
  • 1/4 cups chipotle chile in adobo sauce
  • 1 cup chicken broth
  • salt

  • 1 cup onion, sliced
  • 1 1/2 cups Poblano chile strips
  • 7 eggs
  • cilantro, finely chopped

  • Blend the tomatoes, onion, garlic clove, chipotles, chicken broth, salt, and pepper for 3 minutes. Set aside.
  • Add oil to a saucepan over medium heat, sauté the onion until soft and translucent, add the rajas and sauté for 5 minutes. Then, beat the eggs, add them, season with salt and pepper, and cook for 5 minutes, stirring continuously.
  • Pour in the chipotle sauce and cook the eggs over low heat for 10 minutes, adjusting the seasoning.
  • Serve the eggs with rajas in red sauce in a deep plate and garnish with cilantro.
