Fried Egg Salad Sandwich

  • 6 slices sandwich bread
  • vegetable oil
  • water
  • 8 San Juan® eggs
  • 1/4 cups parsley
  • 2 cups chives
  • salt
  • pepper
  • 1/2 tablespoons paprika
  • 1/2 cups mayonnaise
  • chives
  • avocado

  • Use a rolling pin to flatten the slices of bread. Bring two corners of the bread together to form a taco and place a toothpick.
  • In a skillet, heat the oil over medium heat. Fry the bread for 3 minutes or until golden brown. Drain and set aside.
  • Cook the eggs in a pot with enough boiling water for 9 minutes. Remove from the water and let cool.
  • Remove the shell from the eggs, place them in a bowl, and add parsley, green onion, salt, pepper, and paprika. Use a fork to mash the ingredients until slightly crushed. Add the mayonnaise and mix until well combined.
  • Remove the toothpick from the fried bread, fill with the egg salad, serve, and garnish with green onion and avocado.
