Seafood Frittata

  • 200 grams shellfish
  • 8 San Juan® eggs
  • 2 San Juan® eggs, hard-boiled
  • 2 romaine lettuces
  • 2 tomatoes, cut into wedges
  • 4 sprigs parsley
  • potato, to taste
  • red onion, finely chopped
  • vegetable oil

  • In a hot pan, add oil. Sauté the red onion and then add the seafood. Let it cook for a moment.
  • Beat the San Juan eggs and add them to the pan with the seafood.
  • Let it cook while you form a kind of omelet. Set aside.
