  • 4 tomatoes
  • 1/4 onions
  • 1 clove garlic, with shell
  • 1 serrano chile
  • 3 árbol chiles
  • 8 eggs
  • pinches salt and pepper
  • 1 tablespoon vegetable oil
  • corn tortillas
  • refried beans, or crushed for serving
  • 4 serrano chiles, grilled, for decoration
  • fresh cilantro

  • For the sauce, roast the tomato with the onion, garlic, serrano chili, and árbol chili.
  • Remove the garlic shell and blend it together with the tomatoes, onion, and chiles. Strain if necessary.
  • In a bowl, beat the eggs, season with salt and pepper.
  • In a pan, heat the oil and cook the eggs to your liking. Pour in the sauce and cook for 5 more minutes to integrate all the flavors. Adjust seasoning.
  • Serve decorated with a grilled serrano pepper and cilantro. Accompany with tortillas and refried beans.
