Huevos Rancheros with Nopal

What better option for an easy and delicious breakfast than this recipe for Huevos Rancheros with Nopal, which are also low in carbohydrates and served on a roasted nopal instead of a tortilla. You can add refried beans spread on the nopales or as an extra side. Another great option to enhance this easy breakfast is to use turkey ham.

  • 1 clove garlic
  • 1/4 onions
  • 2 tomatoes, cut into quarters
  • 1 tomatillo, cut into quarters
  • 10 árbol chiles, dried
  • coarse salt
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro, finely chopped
  • 1 tablespoon Primavera® margarine, 225g bar
  • 4 nopales
  • salt and pepper

  • 4 eggs
  • 1/2 cups refried beans
  • 1/2 avocados, sliced, for garnish
  • fresh cilantro, for garnish
  • radish, cut into triangles, for garnish
  • queso fresco, crumbled, for garnish

  • For the sauce, roast the garlic, onion, tomato, and árbol chiles on a hot griddle over medium heat.
  • In a molcajete, grind the roasted garlic with a bit of coarse salt until it forms a paste. Add the onion and grind until crushed. Continue with the árbol chiles, tomatoes, and add lime juice to help blend. Once you have a sauce, add the cilantro and adjust seasoning. Set aside.
  • In a skillet over medium heat, melt a teaspoon of Margarina Primavera® and cook the nopales until tender, seasoning with oregano, salt, and pepper. Set aside.
  • In a skillet over medium heat, melt two tablespoons of Margarina Primavera® and fry the eggs to your desired doneness, seasoning with salt and pepper.
  • Spread each nopal with a bit of hot refried beans, place the eggs on top, and serve with the roasted salsa. Garnish with avocado, cilantro, radish, and fresh cheese.
