Heat some oil in a large skillet. Sauté the mushrooms until soft, about 5-6 minutes. Set aside.
Place the spinach in a deep skillet. Add a little water. Using medium heat, cook the spinach until wilted, about 3-4 minutes. Drain the excess water very well.
In a large bowl, beat the eggs until well mixed. Add the mushrooms, cooked spinach, cheeses, and cream. Mix well. Season to taste.
Divide evenly among the 12 muffin molds.
Bake for about 20-23 minutes, or until set and a tester/toothpick inserted in the center comes out clean.
