Mini Spinach Quiche

  • 2 tablespoons vegetable oil
  • 250 grams fresh spinach
  • 4 eggs
  • 1 cup cheese, shredded of your choice
  • 100 grams button mushrooms, chopped
  • 2 tablespoons whipping cream
  • 1 pinch salt
  • 1 pinch pepper

  • Preheat the oven to 375°F or 190°C.
  • Heat some oil in a large skillet. Sauté the mushrooms until soft, about 5-6 minutes. Set aside.
  • Place the spinach in a deep skillet. Add a little water. Using medium heat, cook the spinach until wilted, about 3-4 minutes. Drain the excess water very well.
  • In a large bowl, beat the eggs until well mixed. Add the mushrooms, cooked spinach, cheeses, and cream. Mix well. Season to taste.
  • Divide evenly among the 12 muffin molds.
  • Bake for about 20-23 minutes, or until set and a tester/toothpick inserted in the center comes out clean.
