Wash the asparagus. Steam the asparagus. When they are ready put them in a bowl with water and ice to preserve the color.
Place the eggs in a bowl and season with salt and pepper to taste, beat until just mixed.
Add a little butter in another egg pan, then add the asparagus and cheese (optional), pour a little of the eggs over them and cover, cook for 5 minutes over low heat or until the omelettes are done.
Once ready, fold in half like a quesadilla and serve.
