Wash the asparagus. Steam the asparagus. Once ready, place them in a bowl with water and ice to preserve the color.
Place the eggs in a bowl and season with salt and pepper to taste, beat until mixed.
Add some butter in another frying pan for eggs, then add the asparagus and cheese (optional), pour a little of the eggs over them and cover, cook for 5 minutes on low heat or until the omelettes are ready.
Once ready, fold in half like a quesadilla and serve.
