Preparation
Wash the asparagus. Cook steamed asparagus . When they are ready, put them in a bowl with water and ice to preserve the color.
Place the eggs in a bowl and season with salt and pepper to taste, beat until they are mixed.
Add a little butter in another egg pan, then add the asparagus and cheese (optional), pour a little of the eggs and cover over them, cook for 5 minutes over low heat or until the omelettes are ready.
Once ready fold in half like a quesadilla and serve.
