In a pan put the chorizo and leave it until it is cooked. Once ready take out the pan and put it on absorbent paper.
Place the eggs in a bowl and season with salt and pepper to taste, beat until they are mixed.
Add a little butter (optional) in a pan for eggs, then add the chorizo, pour a little egg on top and cover, cook for 5 minutes over low heat or until the omelettes are ready.
