  • In a skillet, place the chorizo and cook until done. Once ready, remove from the skillet and place it on paper towels.
  • Place the eggs in a bowl and season with salt and pepper to taste, beat until well mixed.
  • Add a little butter (optional) to an egg skillet, then add the chorizo, pour some egg on top, and cover. Cook for 5 minutes on low heat or until the omelettes are ready.
