Refried Beans-Stuffed Omelet Rolls

  • 1 cup chorizo, cut into small-sized cubes, for the stuffing

  • 1 cup refried beans, for the stuffing
  • 4 eggs, for the omelet

  • For the stuffing: In a skillet over medium heat, fry chorizo. Once it renders fat, add onion and beans. Cook for 10 minutes.
  • For the omelet: In a bowl, beat eggs with cilantro. Season with salt and pepper. Set aside.
  • In a skillet over medium heat, heat cooking spray. Pour omelet mixture. Cook for 3 minutes on each side. Set aside.
  • On a chopping board, place omelet. Stuff with beans. Roll up and cut into rolls. Serve refried beans-stuffed egg rolls with pico de gallo.
