Egg White Omelette with Spinach

A delicious recipe to start the day. The egg white omelette is very light and healthy and can be accompanied by spinach or other vegetables.

  • 6 egg whites
  • 2 tablespoons olive oil
  • 1/2 onions, finely chopped
  • 2 cups fresh spinach, chopped
  • 1 pinch salt
  • 1 pinch pepper
  • green salsas, for accompaniment

  • In a small skillet, heat the oil over medium heat and sauté the onion and spinach for 5 minutes. Season with a little salt.
  • In a deep bowl, beat the egg whites with a little salt until they are slightly frothy.
  • Heat a small skillet or omelette pan and coat it with a little olive oil.
  • Pour half of the egg whites and allow to cook for 90 seconds, then flip the omelette with a spatula and let it finish cooking on the other side.
  • With a spoon, place half of the spinach mixture on one side of the omelette and with a spatula, fold it over the mixture.
  • Remove from the skillet and serve with a green sauce.
