Poblano Omelette Recipe

  • 1 cup onion, in thin strips
  • 1 clove garlic
  • 2 cups Poblano chile strips

  • 1/4 cups Danone® Sugar Free Greek Yogurt

  • 1 cup panela cheese, in medium cubes
  • cherry tomato, in half
  • 1 stick bread, sliced

  • Heat the olive oil in a skillet over medium heat, sauté the onion, garlic, and poblano strips, and season with salt and pepper. Remove and set aside.
  • Whisk the eggs, unsweetened Danone® Greek yogurt, salt, and pepper until combined.
  • Pour the olive oil into a skillet over medium heat, add some of the egg, cook for 5 minutes, fill with the sautéed poblano strips and panela cheese. Fold and cook for 2 more minutes on each side.
  • Serve the poblano omelette on a flat plate and accompany with cherry tomatoes and slices of bread.
