Refried Bean Filled Egg Roll

  • 1/4 cups onion, finely chopped for the filling
  • 1 cup refried beans, for the filling
  • 4 eggs, for the omelette
  • 1 tablespoon fresh cilantro, finely chopped for the omelette

  • For the filling, in a skillet over medium heat, fry the chorizo; once it releases its fat, add the onion, the beans, and cook for 10 minutes.
  • For the omelette, in a bowl, beat the eggs with the cilantro and season with salt and pepper. Set aside.
  • In a skillet over medium heat, spray oil and pour in the eggs, cooking for 3 minutes on each side. Set aside.
  • On a board, place the omelette and fill it with beans, roll it up, and cut into rolls. Serve with pico de gallo.
