Spinach omelette

  • 4 eggs
  • 1 bunch spinach
  • 100 grams Oaxaca cheese
  • 1 tablespoon butter
  • 1 pinch salt
  • 1 pinch pepper

  • Wash the spinach. Skip them with a little butter.
  • Place the eggs in a bowl and season with salt and pepper to taste, beat until they are mixed.
  • Add a little butter in another egg pan, then add the cheese and spinach, pour a little of the eggs and cover over them, cook for 5 minutes over low heat or until the omelettes are ready.
  • Once ready fold in half like a quesadilla and serve.
