Wash the spinach. Sauté them with a little butter.
Place the eggs in a bowl and season with salt and pepper to taste, beat until mixed.
Add a little butter to another pan for eggs, then add the cheese and spinach, pour a bit of the eggs over them and cover, cook for 5 minutes on low heat or until the omelettes are ready.
Once ready, fold in half like a quesadilla and serve.
