4 Tía Rosa® Tortillinas® precooked floured tortillas
8 eggs
1/2 onions, sliced
1 pumpkin, in sticks
1 carrot, in sticks
1 red bell pepper, in sticks
4 teaspoons vegetable oil
salt, and pepper to taste

Heat a little oil and sauté the vegetables, season with salt.
Beat the eggs and season with salt and pepper to taste.
Heat a little oil in a skillet and add the eggs to make an omelette.
Add the sautéed vegetables to the omelette and cook for a few more minutes.
