  • 8 eggs
  • 1/2 onions, sliced
  • 1 pumpkin, in sticks
  • 1 carrot, in sticks
  • 1 red bell pepper, in sticks
  • 4 teaspoons vegetable oil
  • salt, and pepper to taste

  • Heat a little oil and sauté the vegetables, season with salt.
  • Beat the eggs and season with salt and pepper to taste.
  • Heat a little oil in a skillet and add the eggs to make an omelette.
  • Add the sautéed vegetables to the omelette and cook for a few more minutes.
