Easy Tomato Quiche

  • 1/2 kilos puff pastry
  • 6 eggs
  • 300 milliliters whipping cream
  • 200 grams Manchego cheese, grated
  • 2 tomatoes, diced
  • salt, and pepper

  • Preheat the oven to 180 °C.
  • Roll out the puff pastry in a tart pan and poke the bottom with a fork. Remove excess pastry from the edges with the help of a knife.
  • Crack the eggs into a bowl and pour in the cream, then beat lightly. Add the grated cheese, tomatoes, season with salt and pepper, and mix.
  • Pour this preparation over the bottom of the pastry and bake for 40 minutes.
