1/2 kilos puff pastry
6 eggs
300 milliliters whipping cream
200 grams Manchego cheese, grated
2 tomatoes, diced
salt, and pepper

Preheat the oven to 180 °C.
Roll out the puff pastry in a tart pan and poke the bottom with a fork. Remove excess pastry from the edges with the help of a knife.
Crack the eggs into a bowl and pour in the cream, then beat lightly. Add the grated cheese, tomatoes, season with salt and pepper, and mix.
Pour this preparation over the bottom of the pastry and bake for 40 minutes.
