Egg with Green Beans in Pasilla Sauce

  • 2 cups green beans, without tips
  • vegetable oil
  • 6 eggs

  • 4 pasilla chiles, rehydrated
  • 1/4 onions, roasted
  • 2 cloves garlic, roasted
  • 4 tomatillos, roasted
  • 1 cup vegetable broth
  • corn tortillas, to accompany

  • Heat water in a pot until it boils, then add salt and green beans and cook for 30 seconds, remove and drain immediately. Set aside.
  • For the sauce: blend the pasilla chili, onion, garlic, tomatoes, and vegetable broth, then season with salt.
  • Heat a pan over medium heat, add vegetable oil and the green beans, cook for 2 minutes.
  • Bring the bowl with the egg closer, beat it with a fork and pour it in immediately. Cook for 5 minutes, add the pasilla chili sauce and finish cooking.
  • Pair the egg with green beans in pasilla sauce with warm tortillas.
