Eggs with Tortilla Chips

Most grandmothers fed us delicious things; this is a very common recipe in Mexico, and my great-grandmother made it for me many times. Just because its ingredients are humble doesn't mean it isn't tasty; I recommend it.

  • 4 eggs
  • 4 corn tortillas, cut into small squares
  • vegetable oil, necessary amount
  • salt, to taste
  • 1/2 avocados
  • salsas, of chorizo or homemade to taste

  • Cut the tortillas into small squares.
  • Place a skillet with oil over medium heat (approximately 1/4 cup); once hot, add the cut tortillas to fry until they are lightly toasted.
  • Add the eggs and mix until they are cooked to your liking, whether soft or well done.
  • Cut the avocado into cubes or thin slices.
  • Divide into 4 portions in the skillet and place on 4 plates, garnish with avocado on the sides and sauce over the eggs.
