Quick Egg and Cheese Sandwich

This quick egg and cheese sandwich will surprise you, as it is made entirely in the microwave in less than 4 minutes. There is no better combination than melted cheese with egg and the toasted texture of the bread. Delicious!

  • 1 bolillo roll
  • 2 tablespoons tomato, finely chopped
  • 1 tablespoon onion, finely chopped
  • 1 teaspoon serrano chile, finely chopped
  • 2 tablespoons cheddar cheese, grated
  • 1 egg
  • 1 pinch salt
  • 1 pinch pepper
  • 3 tablespoons avocado

  • Cut a lid off the bolillo and remove some of the crumb.
  • Add the tomato, onion, chili, cheddar cheese, and egg. Mix thoroughly and season with salt and pepper.
  • Place the lid back on the bolillo. Microwave for 4 minutes.
  • Remove the lid from the bolillo. Add the avocado.
