This quick egg and cheese sandwich will surprise you, as it is made entirely in the microwave in less than 4 minutes. There is no better combination than melted cheese with egg and the toasted texture of the bread. Delicious!

1 bolillo roll
2 tablespoons tomato, finely chopped
1 tablespoon onion, finely chopped
1 teaspoon serrano chile, finely chopped
2 tablespoons cheddar cheese, grated
1 egg
1 pinch salt
1 pinch pepper
3 tablespoons avocado

Cut a lid off the bolillo and remove some of the crumb.
Add the tomato, onion, chili, cheddar cheese, and egg. Mix thoroughly and season with salt and pepper.
Place the lid back on the bolillo. Microwave for 4 minutes.
Remove the lid from the bolillo. Add the avocado.
