Place the frozen vegetables in a baking dish and heat them in the microwave for 30 seconds on high. Dry the vegetables with paper towels.
In a bowl, pour the San Juan® Egg Whites, the vegetables, onion, chili, and a tablespoon of Parmesan cheese. Mix the ingredients well and season with salt and pepper.
Pour a teaspoon of olive oil into a mug and remove the excess with a napkin.
Pour the San Juan® Egg Whites mixture into the greased mug.
Place the mug in the microwave and cook on high for one minute.
Remove the mug from the microwave and sprinkle with Parmesan cheese.
