Spanish Omelette Recipe

The Spanish omelette, also known as tortilla de patatas, is an omelette that includes diced potatoes and olive oil. This traditional recipe from Spain is delicious and easy to prepare, so your whole family will want to try it, whether as a main dish or for breakfast.

  • 1 cup olive oil, to cook the potatoes
  • 3 potatoes, in half-centimeter slices
  • 1 cup onion, in thin strips
  • 9 eggs

  • Add the olive oil to a pan, and when it is hot over medium heat, it will be time to add the potatoes and onion. Cook over medium-low heat for 6 minutes. Stir the potatoes and cook over medium heat for 5 more minutes. Remove from the oil and set aside.
  • Mix the eggs, salt, and pepper in a bowl with a whisk. Add the previously cooked potatoes and mix using a spatula. Set aside.
  • Add a little oil to a pan and pour in the egg and potato mixture. Cook over low heat for 10 minutes and cover the pan. Flip the potato omelette using a plate, then add a little more olive oil and return it to the pan with the uncooked side down. Cover the pan, cook for another 5 minutes, and remove from heat.
  • Serve the Spanish omelette on a wide plate and accompany with bread, enjoy!
