Spanish Omelette with Chips, Cheese, and Ham

This is a very simple recipe using common ingredients that are readily available in an easy family kitchen, just like opening a bag of small chips and cutting the ingredients to the same size, mixing them, and frying them in a good amount of oil, and the result is incredible just like its flavor.

  • 1 bag potato chips, or chips, natural
  • 3 eggs
  • 3 slices deli ham
  • 2 slices bacon
  • 50 grams Chihuahua cheese
  • 1/4 onions
  • 15 pitted olives
  • 2 pickled Jalapeño chiles
  • parsley
  • 1/4 cups olive oil
  • salt and pepper

  • Cut all the ingredients—ham, bacon, cheese, onion, olives into slices, and pickled peppers without seeds or veins—into small pieces or cubes. Chop the parsley and set aside.
  • Crush the chips a little in their bag, empty and mix with the eggs, cheese, olives, and peppers; season with pepper and salt.
  • Preheat a skillet over medium-high heat with olive oil; once hot, add the ham, bacon, onion, and sauté for two minutes.
  • Once sautéed, add the eggs with all the ingredients and finally the parsley. Let it fry for three minutes, flip it when the egg has set, and finish cooking.
  • Let it rest for one or two minutes, cut, and serve.
