Spanish Omelet

  • 3 cloves garlic, unpeeled
  • 4 potatoes, thinly sliced
  • 1/2 onions, thinly sliced
  • 1 pinch salt
  • 1 pinch pepper
  • 8 eggs
  • olive oil

  • In a skillet over medium-low heat, heat oil. Add garlic and cook until flavor melds. Add potatoes little by little and cook until softened. Add onion and cook until translucent. Remove from heat, drain, let cool, and set aside.
  • In a bowl, mix eggs, salt, and pepper. Add previous mixture and mix until completely incorporated.
  • In a skillet over medium heat, heat olive oil and add the mixture. Cook over low heat until cooked through. Using another skillet or a plate, flip Spanish omelet and cook the other side until slightly golden brown.
  • Remove Spanish omelet from skillet by flipping it with a plate. Serve Spanish omelet with aioli.
