Chop the onion and garlic and fry in a pan with hot oil until the onion becomes transparent.
Chop the cauliflower, potato, and tomato and add them to the onion and garlic, frying for 15 minutes or until the potato is soft and cooked. Set the vegetables aside.
Beat two eggs and add salt and pepper to taste. Pour it into the hot pan with a little oil to form a cooked egg tortilla on both sides. Repeat with two more eggs to make two egg tortillas.
On top of one tortilla, distribute the vegetables and then place the second tortilla on top. Garnish with cream cheese to taste.
