Zucchini and Egg Rolls

Try these healthy and nutritious zucchini rolls filled with egg whites, turkey ham, and panela cheese. They are ideal if you're looking for a delicious dish for the whole family's breakfast.

  • cooking spray
  • 2 cups San Juan® Egg Whites
  • 1/4 cups whipping cream
  • salt
  • pepper
  • 5 pumpkins, lengthwise, into thin slices
  • water, to cook the zucchinis
  • ice cubes, to stop the cooking of the zucchinis
  • 6 slices turkey deli ham
  • 6 slices panela cheese, thin slices to be able to wrap
  • pico de gallo, for accompaniment

Low
  • Add San Juan® Egg Whites, heavy cream, salt, and pepper to a bowl. Mix well and set aside.
  • Spray a little oil in a skillet, pour a thin layer of San Juan® Egg Whites mixture, cover, and cook for 5 to 8 minutes or until perfectly cooked on both sides. Remove.
  • Cook the zucchinis in a pot with enough water for 2 to 3 minutes, remove and place in a bowl with water and ice to stop the cooking. Let rest for 2 minutes, remove from the water, and place on a plate with paper towels.
  • Line a board with non-stick plastic, place a layer of zucchini strips, add the San Juan® Egg Whites, then add the slices of ham and cheese. Wrap tightly, form a roll, and refrigerate for 5 minutes.
  • Remove the plastic and cut the zucchini and egg rolls into 2 cm thick slices. Serve on a board and accompany with pico de gallo.
