Enchiladas with Mirasol Chili

  • 1 kilo tortillas
  • 1/2 kilos tomato, cooked
  • 4 mirasol chili peppers, cooked
  • 1 clove garlic
  • 1/2 kilos cheese, for shredded quesadilla
  • 1 onion, finely chopped
  • 1 lettuce, slice
  • 1 pinch oregano

  • In a bowl, mix the cheese with the onion.
  • Make the sauce with the mirasol chiles, 3 tomatoes, the garlic, using just enough broth to blend, it should be thick, strain it into a deep container.
  • Blend the remaining tomatoes with the oregano and strain it.
  • Heat oil in a saucepan, make tacos with the cheese, dip them in the sauce, and fry them.
