Enfrijoladas

Enfrijoladas are one of the most common Mexican recipes for breakfast or dinner. It is a dish with a high content of proteins and carbohydrates, excellent for starting the day with a lot of energy.

  • 3 cups black beans
  • 1 teaspoon cumin
  • 1 pinch salt
  • 1 cup canola oil
  • 12 corn tortillas
  • 2 cups Manchego cheese
  • 1 onion
  • 1/4 cups cream

  • Cook the beans
  • Blend the beans with a little water
  • Season the sauce with cumin and salt
  • In a skillet, put the oil and fry the tortillas
  • Dip the tortillas in the bean sauce
  • Place the tortilla on a plate and add cheese
  • Add onion, fold the tortilla, and do the same with the others
  • Add more sauce on top of the tortillas, add cream to taste
