Ingredients

4 portions
  • 3 cups black bean
  • 1 teaspoon cumin
  • 1 pinch table salt
  • 1 cup canola oil
  • 12 corn tortillas
  • 2 cups manchego cheese
  • 1 onion
  • 1/4 cups cream

Preparation

Cook the beans
Blend the beans with a little water
Season the sauce with cumin and salt
In a pan put the oil and fry the tortillas
Dip the tortillas in the bean sauce
Put the tortilla on a plate and add the cheese
Add onion, fold the tortilla and do the same with the rest
Add more sauce on top of the tortillas, add cream to taste
