Enfrijoladas with Chipotle

  • 2 tablespoons vegetable oil
  • 1/4 onions, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 2 cups beans, with broth
  • 2 chipotle chiles
  • 1 tablespoon vegetable oil
  • salt
  • 1 sprig fresh cilantro
  • 1 cup vegetable oil, for frying
  • 12 corn tortillas
  • sour cream, to accompany
  • queso fresco, to accompany (crumbled)
  • avocado, sliced, to accompany
  • fresh cilantro, for decoration

  • Heat the oil over medium heat, add the onion, garlic, then the beans and chipotle pepper. Cook for 5 minutes. Let it cool slightly.
  • Blend the previous preparation until you obtain a sauce.
  • Heat a tablespoon of oil over medium heat and pour in the sauce, add salt, let it cook for 5 minutes, and add cilantro.
  • Fry the tortillas in oil over medium heat, leaving them slightly soft, and remove excess fat with absorbent paper.
  • Fill the tortillas with chicken and fold them in half.
  • Place the enfrijoladas on a plate, serve with the hot bean sauce.
  • Serve with cream, cheese, avocado, and cilantro.
