Enfrijoladas with Chipotle

2 tablespoons vegetable oil
1/4 onions, finely chopped
2 tablespoons garlic, finely chopped
2 cups beans, with broth
2 chipotle chiles
1 tablespoon vegetable oil
salt
1 sprig fresh cilantro
1 cup vegetable oil, for frying
12 corn tortillas
sour cream, to accompany
queso fresco, to accompany (crumbled)
avocado, sliced, to accompany
fresh cilantro, for decoration

Low
Heat the oil over medium heat, add the onion, garlic, then the beans and chipotle pepper. Cook for 5 minutes. Let it cool slightly.
Blend the previous preparation until you obtain a sauce.
Heat a tablespoon of oil over medium heat and pour in the sauce, add salt, let it cook for 5 minutes, and add cilantro.
Fry the tortillas in oil over medium heat, leaving them slightly soft, and remove excess fat with absorbent paper.
Fill the tortillas with chicken and fold them in half.
Place the enfrijoladas on a plate, serve with the hot bean sauce.
Serve with cream, cheese, avocado, and cilantro.
