  • 3 serrano chiles

  • 4 eggs
  • 1/2 cups whole black beans

  • Cook the onion, garlic, tomato, and serrano chili in a pot with enough hot water for 5 minutes. Remove from the pot and set aside.
  • Blend the onion, garlic, tomato, serrano chili, salt, and pepper for 2 minutes. Set aside.
  • Heat the oil in a pot over medium heat and fry the sauce for 5 minutes. Keep warm.
  • Heat the oil in a skillet and fry the tortillas for 5 minutes. Remove and place on a plate with paper towels. Fry two eggs for 5 minutes. Remove and repeat with the other two eggs. Set aside.
  • Serve the huevos rancheros and garnish with cilantro leaves.
