4 boxes Ground tomatoes with guajillo chili Del Fuerte®, for marinating
1 kilo beef shank
1 kilo beef rib
vegetable oil
corn tortillas
onion, for accompaniment
cilantro, for accompaniment
avocado, for accompaniment
sour cream, for accompaniment

Pour the crushed tomatoes with guajillo chili Del Fuerte® over the shank and ribs and let marinate for 2 hours.
Place the meat in the pressure cooker and cook over medium heat for 1 hour. Let it cool before opening the pot, remove the meat and shred it.
Heat the oil in a skillet over medium heat and fry the tortillas for 10 seconds on each side. Drain on paper towels to remove excess oil and fill the tortillas with birria.
Serve some sauce on a plate, place the birria enchiladas and drizzle with more sauce. Garnish with onion, cilantro, avocado, and sour cream.
