Birria Enchiladas

  • 4 boxes Ground tomatoes with guajillo chili Del Fuerte®, for marinating
  • 1 kilo beef shank
  • 1 kilo beef rib
  • vegetable oil
  • corn tortillas
  • onion, for accompaniment
  • cilantro, for accompaniment
  • avocado, for accompaniment
  • sour cream, for accompaniment

  • Pour the crushed tomatoes with guajillo chili Del Fuerte® over the shank and ribs and let marinate for 2 hours.
  • Place the meat in the pressure cooker and cook over medium heat for 1 hour. Let it cool before opening the pot, remove the meat and shred it.
  • Heat the oil in a skillet over medium heat and fry the tortillas for 10 seconds on each side. Drain on paper towels to remove excess oil and fill the tortillas with birria.
  • Serve some sauce on a plate, place the birria enchiladas and drizzle with more sauce. Garnish with onion, cilantro, avocado, and sour cream.
