Casserole of Molletes with Egg in Tatemada and Martajada Green Sauce

This casserole of molletes with egg in green sauce is baked and topped with delicious eggs drowned in sauce. It is ideal for a different breakfast, practical for preparing for a large group of people, hearty and filling.

  • 5 bolillo rolls
  • unsalted butter , melted
  • 2 cups refried beans
  • 2 cups bacon, chopped, fried
  • 2 cups Manchego cheese, grated
  • vegetable oil
  • 2 jars Herdez® Green Tatemada and Martajada Sauce, 480 g
  • 5 eggs , broken, separately
  • salt
  • pepper
  • cilantro, for decoration

  • Slice the bolillos in half horizontally, brush the entire surface with butter, and spread the inside with beans. Place the bread halves together in a casserole. Place bacon on each half and add cheese over the entire casserole.
  • Bake at 190 °C for approximately 10 minutes.
  • Heat a semi-deep skillet, add a little vegetable oil and pour in Herdez® Tatemada and Martajada Green Sauce, add the eggs one by one and season with salt and pepper. Lower the heat and cook for approximately 3 minutes.
  • When the molletes come out of the oven, place a piece of egg with Herdez® Tatemada and Martajada Green Sauce on top.
  • Decorate the casserole of molletes with egg in green sauce with cilantro leaves and enjoy.
