I am new to cooking, this is the first recipe I am making, it is simple, easy, and quick to make chilaquiles in green sauce with poblano chile; it may not have technique, but the result is quite delicious. It is ideal for a quick lunch.
2 Poblano chiles, (roasted, peeled, and deveined) (one sliced into thin strips)
5 tomatillos, large
fresh cilantro

chicken broth
cheeses

Peel and wash the tomatoes, roast them a little by placing them directly over the flame. Then cook them with the water. Once cooked, blend together with one of the poblano chiles, onion, and cilantro. Set aside.
In a saucepan, heat olive oil, sauté the strips of the other poblano chile for a few minutes, add the blended mixture along with a little chicken broth. Add salt and cook for 5 minutes.
On a plate, place the tortilla chips and drizzle them with the green sauce with poblano strips. Sprinkle cheese on top and garnish with a cilantro leaf. Serve with rice.
