Chilaquiles Omelette

  • 3 tomatoes
  • 1/4 onions
  • 1 clove garlic
  • 3 guajillo chiles
  • 1 ancho chile
  • salt
  • 1/2 cups chicken broth
  • vegetable oil
  • 3 cups tortilla chips
  • 1 1/2 cups Manchego cheese
  • butter
  • 8 eggs
  • refried beans, for serving

  • Cook the tomatoes, onion, garlic clove, guajillo chiles, and ancho chile in a pan for 5 minutes or until slightly charred.Blend the ingredients with chicken broth and salt.
  • Heat the oil in a pan, pour in the sauce and sauté for 3 minutes. Add the tortilla chips, mix, sprinkle with cheese, and cover.Cook for 2 more minutes or until the cheese is melted. Set aside.
  • Heat a skillet, melt the butter, and add the egg. Spread and cook for 3 minutes or until ready.Place the chilaquiles on the egg, add more cheese, close and fold. Cover and cook for 2 more minutes.
  • Serve the omelette with chilaquiles and accompany with refried beans.
