Chipotle Shrimp Chimichangas

These delicious chimichangas are super crispy on the outside and spicy on the inside. They have a touch of cheese inside that makes them even more irresistible and the best part is that they come with a rich guacamole.

  • 1 tablespoon olive oil
  • 1/4 onions, finely chopped
  • 1 clove garlic
  • 1 cup pink shrimp, small
  • 1 tablespoon chipotle chile, ground
  • 1 teaspoon salt
  • 8 flour tortillas
  • 1/2 cups refried beans
  • 1/2 cups asadero cheese, in strips
  • 1 cup vegetable oil
  • 1/2 cups sour cream, to accompany
  • 1 cup guacamole, to accompany

  • In a skillet over medium heat, heat the oil and cook the onion and garlic. Add the shrimp and chipotle and cook for a few minutes. Season with salt. Reserve.
  • On each tortilla, spread a tablespoon of refried beans, add the shrimp and a little cheese.
  • Close in a chimichanga shape and secure with a toothpick if necessary.
  • Fry the chimichangas in hot oil until golden brown, about 3 minutes. Drain on paper towels and serve immediately with cream and guacamole.
