These delicious chimichangas are super crispy on the outside and spicy on the inside. They have a touch of cheese inside that makes them even more irresistible and the best part is that they come with a rich guacamole.
In a skillet over medium heat, heat the oil and cook the onion and garlic. Add the shrimp and chipotle and cook for a few minutes. Season with salt. Reserve.
On each tortilla, spread a tablespoon of refried beans, add the shrimp and a little cheese.
Close in a chimichanga shape and secure with a toothpick if necessary.
Fry the chimichangas in hot oil until golden brown, about 3 minutes. Drain on paper towels and serve immediately with cream and guacamole.
