  • 8 guajillo chiles, soaked and seedless, for the sauce
  • 4 tomatoes, roasted, for the sauce
  • 1/2 onions, roasted, for the sauce
  • 2 cloves garlic, roasted, for the sauce
  • 1 teaspoon black peppercorn, for the sauce
  • 1 teaspoon clove, for the sauce
  • 1 cup chicken broth, for the sauce
  • 2 tablespoons vegetable oil
  • 1/2 cups onion, finely chopped
  • 2 cups chorizo, for the sauce

  • 1 cup Oaxaca cheese, grated

  • For the sauce: blend the chiles, tomato, onion, garlic, black pepper, and clove. Set aside.
  • Heat the oil in a saucepan over medium heat, then cook the onion for 2 minutes, add the chorizo, cook for 8 minutes or until well cooked. Then, pour in the sauce, salt, and pepper, stir well to combine everything, and cook for 5 more minutes. Set aside.
  • Place the tortilla chips in a baking dish, soak them with the chorizo sauce, add the Oaxaca cheese, and bake at 180 °C for 5 minutes or until the cheese is melted.
  • Garnish the chorizo chilaquiles with cream, onion, and cilantro.
