  • Cut the nopales into thick strips of approximately 1.5 cm in thickness. Cook with a little water and salt. Set aside.
  • Heat a griddle over medium heat, warm the tortillas, and keep them warm.
  • Place the nopal at the bottom followed by the tortilla, spread a layer of beans, and add a layer of Oaxaca cheese. Roll the ingredients up like a sushi roll and secure it with a toothpick. Set aside.
  • For the sauce, boil the tomatoes, onion, garlic, and serrano chili. Blend the ingredients and season with salt and pepper, set aside.
  • Heat a grill pan over high heat and add the rolls, cooking for 2 minutes on each side. Serve the rolls on a plate and pour the green sauce over them. Enjoy!
