Egg Burrito

  • 6 tomatillos, for the green sauce
  • 1/4 onions, for the green sauce
  • 2 serrano chiles
  • 1 clove garlic, for the green sauce
  • 1/4 bunches cilantro, for the green sauce
  • 1/4 teaspoons cumin, for the green sauce
  • salt, for the green sauce
  • 3/4 cups water, for the green sauce
  • 1 tablespoon Spring®
  • 1/4 cups onion, in cubes
  • 1 cup machaca beef
  • 6 eggs, beaten
  • 4 burrito-sized flour tortillas
  • 2 tablespoons Spring®
  • sour cream, for serving
  • queso fresco, crumbled, for serving
  • avocado, in slices

  • Blend the tomatoes, onion, serrano peppers, garlic, cilantro, cumin, salt, and water until a smooth and silky sauce is achieved.
  • Pour the green sauce into a pot and cook over medium heat for 15 minutes or until a smooth consistency is achieved. Set aside.
  • Add Primavera® to a hot skillet, sauté the onion, the shredded beef, add the beaten egg, and cook for 3 minutes or until soft and creamy.
  • Heat the flour tortillas, fill with the shredded beef and egg, wrap, and place in a skillet with Primavera® to lightly brown.
  • Serve the shredded beef and egg burrito on a deep plate, drizzle with green sauce, and garnish with cream, fresh cheese, and avocado slices.
