Gratinated Swiss Enchiladas

  • 1 chicken breast
  • 4 tomatillos
  • 1/4 white onions
  • 1 garlic
  • 1 green bell pepper
  • 1 serrano chile
  • 4 tablespoons fresh cilantro
  • 1/2 liters FAGE® Total 0% greek style yogurt
  • 1/2 cups chicken broth
  • 1/4 teaspoons salt
  • 3 tortillas
  • 1/2 cups vegetable oil
  • 60 grams Manchego cheese

  • Cook the chicken breast in water. Once it is perfectly cooked, remove the excess water and shred it.
  • Grill the tomatoes, onion, garlic, green pepper, serrano chili, and cilantro in a skillet.
  • Blend the roasted vegetables with FAGE Total® 0% yoghurt and add the chicken cooking water, salt, and pepper to taste.
  • Fry the tortillas in a little oil, do not brown them too much, just 1 minute on each side. Remove them from the oil and place them on absorbent paper.
  • Fill the tortillas with shredded chicken, roll them up to form tacos, and secure them with a toothpick.
  • Place the chicken tacos in a baking dish and pour the FAGE Total® 0% yoghurt sauce over them. Sprinkle the manchego cheese and bake at 200°C for 15 minutes or until the cheese is gratinated.
