Green Beans with Mexican-style Eggs

  • 1/4 onions, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 3 tomatoes, seedless, diced
  • 1 cup green beans, cooked
  • 3 serrano chiles, seedless, finely chopped
  • 5 eggs, previously beaten in a bowl

  • In a pan with oil, sauté the onion and garlic until they change color. Add the tomato, green beans, and serrano chili; let cook for a few minutes. Incorporate the previously beaten egg and chopped cilantro, stirring constantly; season with salt and pepper, and cook for 6 minutes on low heat.
  • Garnish with cilantro leaves and slices of serrano chili, serve with beans and tortilla. Enjoy!
