  • 1/4 pieces onion, grilled
  • 1 clove garlic, roasted
  • 6 tomatillos, roasted
  • 3 morita chiles, rehydrated
  • 1/4 cups cilantro leaves
  • 1/2 cups chicken broth
  • 2 tablespoons vegetable oil
  • salt
  • tortilla chips
  • cochinita pibil, for accompaniment
  • sour cream
  • queso fresco, shredded
  • cilantro leaves, for decoration
  • red onion, in thin strips, pickled

  • Blend the onion, garlic, tomatillo, cilantro, morita chili, and chicken broth.
  • Heat the vegetable oil in a cast-iron skillet over medium heat, pour in the sauce, and cook for 5 minutes. Season with salt, add the tortilla chips, and cook for 5 more minutes.
  • Add the cochinita and decorate the chilaquiles with cream, cheese, and cilantro leaves.
