  • 2 tomatillos, for the sauce
  • 1/4 onions, roasted, for the sauce
  • 1 clove garlic, roasted, for the sauce
  • 1 morita chile, soaked, for the sauce
  • salt, for the sauce
  • cilantro, for the sauce
  • 1/4 cups water, for the sauce
  • 4 bolillo rolls
  • refried beans
  • Manchego cheese
  • chorizo, fried
  • 4 eggs
  • Chiles in Vinegar, for accompaniment

  • Blend the tomatoes, onion, garlic, morita chili, salt, cilantro, and water until you get a sauce. Set aside.
  • Cut the bolillo in the center and remove the crumb, then use a spoon to add refried beans, cheese, chorizo, green sauce, and an egg.
  • Place the stuffed bolillo with egg on a baking sheet and bake at 200 °C for 15 minutes.
  • Serve the stuffed bolillo with egg and accompany with pickled jalapeños.
