Swiss Chilaquiles

Try these delicious chilaquiles with the creamy Swiss sauce, full of flavor thanks to the combination of tomatillo, cuaresmeño chili, cream, and sprinkled with tasty chicken and manchego cheese that will give the final touch to these chilaquiles.

  • 2 tablespoons butter, for the sauce
  • 1/2 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 10 tomatillos, in halves, for the sauce
  • 3 cuaresmeño chiles, without tails, for the sauce
  • 1 cup chicken broth, for the sauce
  • salt, for the sauce
  • pepper, for the sauce
  • 1 cup sour cream, for the sauce
  • 4 cups tortilla chips
  • 2 cups chicken breast, cooked and shredded
  • 4 Manchego cheese, sliced
  • cilantro leaves, for garnish
  • red onion, in thin strips, for garnish

  • Add the butter to a pot, melt over medium heat, and add the onion, garlic, tomatillos, and cuaresmeño chili. Cook for 5 minutes, and when they change color, add the chicken broth and cook for another 5 minutes. Remove and set aside.
  • Blend the tomato, onion, garlic, cilantro, cuaresmeño chili, broth, cream, salt, and pepper for 5 minutes or until you achieve a smooth consistency. Return to a pot and cook for another 5 minutes.
  • To serve the chilaquiles: in a deep oven-safe plate, add the tortilla chips, add some chicken, and cover with the Swiss sauce. Then, add the cheese, bake at 200 °C for 5 minutes to gratin. Garnish the Swiss chilaquiles with cilantro leaves and red onion.
