Ingredients: 2 tablespoons butter, for the sauce; 1/2 onions, for the sauce; 1 clove garlic, for the sauce; 10 tomatillos, in halves, for the sauce; 3 cuaresmeño chiles, without tails, for the sauce; 1 cup chicken broth, for the sauce; salt, for the sauce; pepper, for the sauce; 1 cup sour cream, for the sauce; 4 cups tortilla chips; 2 cups chicken breast, cooked and shredded; 4 Manchego cheese, sliced; cilantro leaves, for garnish; red onion, in thin strips, for garnish

Add the butter to a pot, melt over medium heat, and add the onion, garlic, tomatillos, and cuaresmeño chili. Cook for 5 minutes, and when they change color, add the chicken broth and cook for another 5 minutes. Remove and set aside. Blend the tomato, onion, garlic, cilantro, cuaresmeño chili, broth, cream, salt, and pepper for 5 minutes or until you achieve a smooth consistency. Return to a pot and cook for another 5 minutes.
