Yucatecan Style Eggs

This Yucatecan style egg recipe will delight you for breakfast. We added our personal touch and the recipe turned out extraordinarily delicious.

  • 6 cups water
  • 7 tomatoes, ripe
  • 1/4 onions
  • 1 cup vegetable oil, for frying the sauce, tortillas, and green plantains
  • 2 pinches salt
  • 8 corn tortillas
  • 1 cup refried black beans
  • 8 eggs
  • 1 cup deli ham, chopped
  • 1/2 cups peas, cooked
  • 1/2 cups panela cheese, LALA®, grated
  • 2 plantains, sliced and fried

  • Heat the water in a medium pot over high heat and cook the tomatoes for 4 minutes. Remove from the water and blend with the onion.
  • Heat two tablespoons of oil in a medium pot over medium heat; add the tomato sauce, cook for 5 minutes, then add the ham and peas and heat for another 3 minutes, season and set aside.
  • Fry the tortillas in hot oil until golden. Place them on absorbent paper to remove excess fat.
  • Heat oil in a skillet and fry two eggs without breaking the yolk.
  • Place a fried tortilla on a plate, spread a bit of beans, place the fried eggs on top, and cover with another tortilla topped with beans. Pour the tomato sauce over it and sprinkle some cheese. Serve with slices of fried green plantain.
