Mexican Enchiladas

  • 1 onion, small
  • 500 grams chicken breast, boiled and shredded
  • 1 pinch salt
  • 1 tablespoon chicken broth, powdered
  • 8 serrano chiles
  • 150 cubic centimeters vegetable oil
  • 5 tomatoes
  • 24 corn tortillas
  • 150 grams grated cheese

  • Blend the tomatoes, chiles, onion, and chicken broth cubes. Place in a clay pot and heat until it boils.
  • For about 15 to 20 minutes. Grate the cheese, and dip the corn tortillas in oil. Place in a pan with oil and fry the tortillas.
  • Place the cheese-filled tortillas in a baking dish, serve with cream, cheese, and gratin.
  • Bake until golden brown.
